Delicious Healthy Dip – Great in Wraps, on Toast & Raw Veggie Dip.

Ingredients

1 EGGPLANT (PRICK WITH FORK & BAKE IN OVEN WHOLE ON OVEN TRAY).

1 -2 LEMONS (SQUEEZE LEMON AND FINELY GRATE 1 TEASPOON LEMON RIND).

1 DESSERTSPOON TAHINI.

FRESHLY GROUND SALT & PEPPER TO SEASON.

 

Instructions

Bake eggplant in oven at 180C for 30-40 mins until soft.

Remove skin and put into blender with other ingredients.

Blend until smooth and creamy.

Season with Salt & Pepper and add more Lemon Juice if needed.

 

Serve with Dry Biscuits, Fresh Vegetables, on Toast for Breakfast.
