This week we present a very easy healthy recipe that can be used as a snack or part of a meal.

Cinnamon Roasted Sweet Potato

2 large sweet potatoes, cut into wedges (leave skin on)
1 tablespoon olive oil
Pinch sea salt
1 generous teaspoon of ground cinnamon

Combine sweet potato with olive oil, salt and cinnamon. Arrange onto a baking tray lined with baking paper, making sure to spread the wedges out into a single layer so they roast properly.
Bake at 200 C for 40 minutes or until tender.

A Swedish study published in the American Journal of Clinical Nutrition showed that the inclusion of just half a teaspoon of cinnamon in the diet per day lowered blood glucose levels.

These are so easy to do, have a bit of a cook up tonight and have them all weekend.
