Three herb Thai chicken

Thai chicken

Ingredients:

1 boneless skinless chicken breast chopped finely

0.5 cup Chicken Broth

2 Cloves Garlic minced

1 red Thai Chilli minced

1 knob (small) Ginger grated

1 Pinch of Salt

1 tablespoon Sugar

2 carrots peeled into strips

1 Red Onion peeled and thinly sliced

2 tablespoons Fish sauce

1 cup Peanut or almond slivers

Zest and juice of 1 Lime

coriander leaf chopped

Method:

1. Toss the chicken and the broth into a sauté pan set over a medium heat. Add the garlic, chili, ginger, salt and sugar. Stir and continue cooking until the chicken is cooked through.

2. Toss the cooked chicken with the remaining ingredients.
